It’s Spring in 2017 and rustic style weddings aren’t going anywhere! We love the welcoming and relaxed sense of home this style invokes. Wooden tables draped with flowers and strings of lights hung overhead in the tall ceiling of a restored barn, surrounded by the warmth of family and friends. This was the scene of a wedding we were thrilled to cater on a beautiful evening in April at Dulaney’s Overlook in Fredrick.
After a lovely ceremony, cocktails and stationary hors d’oeuvres were available to guests under the main floor of the barn. A Gourmet Cheese Display was accompanied by crackers and a variety of dipping mustards. A Bruschetta Trio Display also graced the tables offering a variety of options to choose from such as Tomato Bruschetta, Mushroom & Goat Cheese Bruschetta, White Bean & Eggplant Bruschetta, all served with Baguettes, Pumpernickel & Italian Breads. Finally could you even be sure you were in the great state of Maryland without Jumbo Lump Crab Fondue accompanied by Parisienne Bread, Crackers and Fresh Carrot and Celery Sticks?
Butlered hors d’oeuvres soon followed in a style that was much more bite size/ grab and go; which happens to be a hot trend as of recently. Double Crème Brie Tarts topped with Apricot Chutney, Coconut Chicken Bites with Mango Chutney Dipping Sauce, Baby Lamp Chops with Mint Julep Glaze, and Tuna Tartare with Sesame in Asian Spoons all made their debut served by Santoni’s friendly faces.
Guests then moved to the main floor and were seated to be served dinner. The meal began with a Mixed Field Greens Salad with Strawberries, Blueberries, Mozzarella and Sliced Almonds tossed in a Honey Balsamic Vinaigrette Dressing served with Artisan Rolls & Butter. Then came the always satisfying main course; Beef Tenderloin with Herbs & Spices and Grilled Salmon with Mango Salsa accompanied by Garlic Mashed Potatoes and Gourmet Marinated Vegetables. A Vegetarian Entrée was made available as Stuffed Bell Peppers.
And what is any meal without dessert? A lovely three tier wedding cake, topped with a gold monogram of the couple’s initials to match the gold brushstroke details on the bottom of each tier, included three flavors to satisfy any guest’s after dinner tastes. The top tier was a lightly sweet Chocolate Chip Cake with Pastry Cream Filling. The middle was nothing short of a chocolate lover’s dream; Chocolate Cake with Chocolate Mousse Filling. And finally, the bottom tier was a classic Almond Cake with Raspberry Filling.
